Instructions:

For the Kaspress bacon croquettes, first preheat the oven to 180 °C top/bottom heat.

For the dip, place the garlic with the skin in an ovenproof dish, add water and braise in the oven for approx. 30-40 minutes (depending on size) until soft. Remove garlic pulp from skin with the back of a knife and mash with a fork. Mix with crème fraîche, lemon juice, olive oil, salt and pepper and season to taste.

For the croquettes, finely dice the onion, fry the bacon a little in a pan first, then add the onion and sauté until translucent. Set aside.

In a bowl, mix the bread cubes with the remaining ingredients (except the breadcrumbs), stir in the cooled bacon and onion mixture, press down lightly and let sit for about 10 minutes.

Form croquettes from the mixture with moistened hands and turn them in the breadcrumbs.

Heat some fat in a pan and fry the croquettes all around until golden brown. Drain the Kaspress bacon croquettes on kitchen paper and serve with the dip.
