For the cauliflower rice with mushrooms and raisins, preheat the oven to 160 degrees. Wash the cauliflower and chop with a food processor.

Peel, halve and finely slice the onion, clean the mushrooms and also finely slice them. Put the vegetables, raisins and spices in a roaster or baking dish.

Bring the vegetable soup to a boil with the apple juice and bay leaf and pour over the vegetables – place in the oven for about 35 minutes.

Stir again, season to taste and serve the and cauliflower rice with mushrooms and raisins!
