Boil the cauliflower in salted water and cool. Cut the ham and eggs into cubes, make a sauce with sour cream or crème fraiche and egg yolk and season to taste (lots of curry!). Form the cauliflower cut into roses in layers with ham and eggs in a gratin dish and pour the sauce over it.

Baguette goes very well with this.

Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
