Celery and Potato Mash with Sausage

For the celery-potato mash, peel potatoes and celery and cut into coarse pieces. Wash the potatoes and celery and cook them in sufficient salted water for about 20 minutes.

Heat oil in a pan, fry the sausages for about 8 minutes, turning regularly. Peel the red onions and cut them into rings. Remove the sausages from the pan and set aside.

Fry the onions in the fat for about 5 minutes, season with salt and pepper, then dust with flour. Add 250 ml of vegetable soup and simmer gently, add sausages.

Drain potatoes and celery, add milk and butter and mash coarsely (do not use blender). Season with salt, pepper and nutmeg.

Divide the celery-potato mash among preheated plates. Add the sausages. Generously pour the onion sauce over the celery and potato mash.
