Instructions:

For the celery in batter with paradeis roast, first peel the celery, cut into thumbnail wide slices and boil until soft.

Scald the tomatoes and peel them. Cut the flesh into small cubes. Peel and finely chop the onion. Heat a little oil and fry the onion until translucent. Add sugar, melt and add the tomatoes. Stir in tomato paste, herbs and raisins. Add balsamic vinegar and water. Simmer over low heat until a thick sauce is formed. Season to taste with salt and pepper.

Mix all ingredients for the batter. Heat oil in a large skillet. Pull celery slices through batter, drain well and fry out in oil.

Serve celery in batter with paradeis roast.
