We rinse and remove the peel from the celery bulb and cut it into pieces. We sweat the onion in the oil and form the celery pieces to it together with the leaves belonging to it, the pepper, lemon, salt, an appropriate mass of water and all together simmer 1/2 hour with closed lid on low heat.
