For the chanterelle sauce with bread dumplings, clean the chanterelles well and cut them into flakes. Finely dice the onion and lightly fry in butter.

Add the chopped parsley and the chanterelles and fry. As soon as the water has left the mushrooms (but not evaporated!!), add 400 ml of water, a pinch of soup spice, salt and pepper and simmer on low heat for about 10 minutes.

Mix the sour cream and flour well with a dash of water and then stir into the sauce to thicken.

Serve the chanterelle sauce with bread dumplings.
