Wash and peel the potatoes. Using a sharp knife, cut the potato into thin slices, being careful not to cut completely through so that the potato slices still hang together.(Stop about 3-5 mm before cutting through).
Cut the cheese slices into 1-2 cm squares and stick them into the grooves of the potato. Preheat oven to 200 °C/ hot air.
Brush cheese fan potatoes with olive oil and bake in oven for 30 minutes. After baking, salt and pepper well.
