For the cheese pancake, separate the eggs.

Egg whites are beaten to stiff snow. Yolks, Thea and salt stir until foamy. Stir in milk and flour alternately. Stir in cheese and carefully fold in beaten egg whites. Melt thea in a coated pan and pour in the batter and bake for about 2 minutes.

Then finish baking in the oven at 170 degrees for about 15 minutes. Remove from the oven and tear the pancake with 2 forks.

Arrange the cheese pancake on plates and sprinkle with grated cheese.
