For the cheese pockets, preheat the oven to 200 degrees (convection oven 180 degrees). Dust the puff pastry with flour and cut into triangles (side length approx. 15 cm).

Whisk the egg yolk and brush the edges of the pastry with it. Cut the raclette cheese into smaller triangles than the puff pastry and place a small piece of raclette cheese in the center of each triangle.

Fold the dough, press it down well, brush with egg yolk and sprinkle with caraway seeds. Bake in the oven for about 20 minutes.

Mix crème frâiche with the chives, salt and pepper and serve with the cheese pockets.
