Instructions:

The cheese profiteroles are a fine thing with a glass of wine. They are also well suited for freezing. If necessary, defrost at room temperature or bake briefly in the oven.

1. boil water with butter and a little salt, remove the saucepan from the heat and stir in the flour. Stir until the dough comes off the bottom of the saucepan.

Stir one egg into the hot mixture, then add Brie and half of the Parmesan. Stir in remaining eggs, one at a time, until a smooth batter forms. Cool the mixture.

3. preheat oven to 200 °C. Line baking sheet with parchment paper. Fill dough into a piping bag and pipe doughnuts at intervals onto the baking sheet. Brush the doughnuts with yolk and sprinkle with the remaining Parmesan cheese. Bake the profiteroles in the heated oven (middle shelf) for about 40 minutes.
