Instructions:

Heat butter, brown flour and extinguish with milk. Add cheese and let it melt. Add egg yolk, season to taste and cool. Whip egg whites until stiff and fold in, spread dough evenly on a baking sheet lined with parchment paper and place in preheated oven.

For the filling, cut peppers into cubes, chives into rolls, mix both with cream cheese and season with spices. Turn the dough out onto a dish rack, moisten the paper and carefully peel it off. Spread filling evenly on the dough and roll up into a roulade using the cloth.

Place cheese roulade repeatedly on baking sheet, sprinkle with cheese and gratinate under heated broiler until cheese is golden.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
