For the chestnut tart, first grind or mash the chestnuts with a little butter, fold in 2 egg yolks, season and whip the snow with salt and sugar, mix gently.

Cover the springform pan (18 cm diameter) with short pastry, pour in the chestnut mixture and bake at 200 °C for about 15-20 minutes.

Decorate the chestnut cake with powdered sugar and, if desired, chocolate pralines or similar.
