Make strong coffee for the chestnut tiramisu. Crush the vanilla pod. Beat egg yolks with vanilla sugar until foamy.

Mix mascarpone with chestnut puree and stir spoonful by spoonful into egg mixture.

Stir in finely chopped vanilla bean. Fold the beaten snow into the mascarpone mixture by the spoonful.

Mix coffee with cognac and Kahlúa and soak biscuits in it. Line the bottom of a mold with biscuits and spread with a layer of cream. Then alternate another layer of biscotti and a layer of cream.

Smooth the top layer and sprinkle with dark chocolate or cocoa powder and decorate with a chestnut.
