Instructions:

For the chicken breast strips:

Blend curry paste, leaves, cashews from 3-4 sprigs of Thai basil and coconut milk in a hand blender until a firm paste forms.

Rinse chicken breast fillet, rub dry, place in a greased ovenproof dish, spread basil paste thickly on top and press a little bit smooth. Cook in a heated oven at 180 °C , convection oven 160 °C , gas mark 3 for about 20 minutes. Then place under the broiler or on the highest setting in the oven and cook until lightly browned.

For the onion and sugar snap peas: Peel onions and cut into eighths lengthwise. Clean sugar snap peas. Heat oil in a frying pan and sauté onions, add mirin. Add the sugar snap peas and saute briefly. Season with salt and pepper. Pluck remaining Thai basil and mint from stems and fold in.

Cut chicken breast fillet into strips about 1.5 cm wide and arrange on top of the vegetables.
