For the chicken kung pao, first cut the chicken into small cubes. Put the meat in a small bowl and mix with salt, egg white and starch flour.

Cut the green bell pepper into triangles or cubes the size of the meat cubes.

Heat the oil in a wok, add the chicken and fry for 1 minute. Remove and keep warm.

Add green onion, ginger, chilies and green bell pepper. Fry for 1 minute. Now mix in the chicken with the yellow bean paste and wine. Mix well and fry for another minute. Mix the cashew nuts and sesame oil into the chicken kung pao.
