For the chicken with coconut milk and sweet potatoes, first salt the chicken. Cut lemongrass and chili in half lengthwise. Quarter the limes. Peel garlic, ginger and shallots and cut into thin wedges. Cut the peeled sweet potatoes into cubes.

Heat 4 tablespoons of oil in a casserole, brown the chicken in it and then remove it.

Sauté the vegetables, except the sweet potato cubes, in the drippings, deglaze with the coconut milk, add the chicken and simmer, covered, over low heat for about 40 minutes.

Add the sweet potatoes and simmer for another 20 minutes.

Before serving, season the sauce with salt and pepper and sprinkle the chicken with coconut milk and sweet potatoes with fresh cilantro.
