For the chicory shuttles of chicory cut out the bitter core at the bottom wedge-shaped and wash the lettuce. Insert two leaves into each other in opposite directions to form boats.

Mix curd cheese with a little milk, half of the lemon juice, ketchup, horseradish and paprika powder. Drizzle crabs with the rest of the lemon juice.

Reserve some crabs, fold the others into the curd. Fill into the chicory boats and serve garnished with the rest of the crabs and some cress.
