Chicory Gratinated with Orange Butter

Instructions:

Cut the chicory in half, discarding the stalk. Fry in butter and powdered sugar all around so that the chicory takes color. Add shallots, thyme and new spice and extinguish with clear soup. After about 3 min, remove chicory and place in a baking dish. Cover thinly with orange butter and brown under the broiler.

Briefly reduce the resulting liquid in the roasting pan, thicken with a little butter and arrange the vegetables on top of the sauce.

Orange butter: Stir the butter until creamy and mix all ingredients well.
