For Chinese beef, shred the meat into narrow strips. Wash the celery and remove the leaves. If the stalks are very thick, cut in half lengthwise 1 or 2 times to fit the size of the meat. Chop into pieces about 3 inches long.

Peel ginger and chop into narrow strips.

Heat oil in a frying pan or wok. Stir-fry beef briefly in it over high heat. Add salt, rice wine and ginger and continue cooking briefly until the meat has turned brown.

Add the bean paste and celery, and saute everything together, stirring, for about 3 minutes more, until the celery is firm to the bite.

Season Chinese beef with sugar and Sichuan pepper.
