For the Chinese cabbage with salmon caviar and gin, chop the onions very finely and sauté them in a pot with olive oil, add the cabbage with a small dash of vinegar and pour a little white wine. Cover the pot and let it simmer. Season to taste with a little ginger, salt and pepper and mash with a blender or blender stick.
