Instructions:

Rinse the cooled meat, dry it and cut it into small slices.

For the marinade, mix the yolks with the water, soy sauce, salt and cornstarch. Put the meat in the marinade form, stir and let it sit for about thirty minutes.

Drain the pineapple in a sieve, reserving the juice. Rinse the peppers, cut them into quarters and remove the seeds and white partitions. Cut the peppers into small strips.

Heat the oil in a wok or possibly in a large frying pan. Lift the meat out of the marinade, drain briefly and turn it in the cornstarch to the other side. Fry in portions in the hot oil. Remove with a slotted spoon and degrease on kitchen roll.

Cook the bell pepper strips, pineapple pieces and peas in the remaining fat for about five minutes, stirring. Add the vinegar, ketchup and pineapple juice. Boil the liquid a little bit. Season with salt, sugar and sambal oelek.

Add the meat one more time and heat it in the sauce. Serve the sweet and sour stir-fry with grainy cooked long grain rice.
