For the chocolate banana stanitzel, break the chocolate into coarse pieces and melt with a little oil in a water bath. Roughly chop the banana chips or put them in a freezer bag, seal it and crumble it rather coarsely (with a pasta walker or a shredder). Pour into a bowl or deep dish.
Once the chocolate has melted, dip stanitzels in, let drain a bit, and immediately roll in the banana crumbs. Place in tall jars to dry.
Fill the chocolate banana stanitzels with ice cream scoops to taste and serve.
