For the chocolate cake with marinated plums, first separate the eggs for the chocolate cake. Beat the egg whites with the vanilla sugar until stiff. Melt the chocolate. Sift the flour through a fine sieve.

Cream butter, powdered sugar and egg yolks. Mix in the softened chocolate and almonds. Fold in the flour. Finally, add the beaten egg whites.

Butter and flour a loaf pan or springform pan or several small ramekins. Pour in the batter. Bake the chocolate cake in a preheated oven at 160 °C for approx. 45-50 minutes. The baking time will be shorter if you use smaller ramekins. Test with chopsticks.

Lightly caramelize sugar in a saucepan, deglaze with port and apple juice. Add remaining ingredients and cook for 5 minutes. Serve chocolate cake with marinated plums.
