For the chocolate cherry cake, make an oil mixture/dough.

Separate the eggs. Beat the snow. Beat the yolks and sugar until very foamy. Add vanilla sugar and continue to beat until fluffy.

Slowly add oil, rum and water and stir in. Mix spelt flour with baking powder, cinnamon and cocoa.

Carefully/alternately fold into the yolk mixture with the snow. Spread on a baking sheet and pepper/cover with cherries.

Bake at 180 °C for about 30-40 minutes with hot air.
