For the Christmas Marzipan Cupcakes, first beat the eggs with the sugar until foamy. Stir in the milk and oil and mix everything well. Add a pinch of salt.

Preheat the oven to 180°C.

Mix the flour with the baking powder and stir the flour mixture into the egg mixture. Cut the marzipan into small cubes and roll in flour so that the cubes are covered on all sides. Fold the marzipan cubes into the cupcake mixture.

Place the muffin tray on a baking sheet and line each well with a paper cup. Divide the cupcake mixture evenly among the cups and bake in the preheated oven for about 20-25 minutes. Afterwards, let the cupcakes cool completely before decorating the Christmas cupcakes with the marzipan.

An alternative to the marzipan paste is “Massa ticino”, which is easier to process for decorating cupcakes, but in terms of taste it is difficult to compete with the marzipan decoration.
