Toast nuts and almonds in a pan for 3 to 4 minutes until fragrant. Then melt the butter in a small saucepan and let cool.

Beat the eggs with salt and sugar until the mixture has doubled in size and is fluffy. Then stir in the melted butter and sift in the flour, cinnamon and baking powder and mix.

Work the toasted nuts into the soft dough and shape into two equal-sized balls on a floured work surface.

Shape the balls into two sticks about 30 cm long and place them on a baking sheet lined with baking paper. For smaller cantucci, simply form the bars from three equal-sized balls.

Preheat the oven to 190 °C.

Brush the cantucci bars with the beaten egg and bake for 20 minutes.

Then let cool for a few minutes and cut the bars diagonally into slices about 1 to 1 1/2 cm wide. Then place the slices on several baking sheets spread with baking paper and turn the oven down to 170 °C. Bake the cantucci again for about 15 minutes.
