Instructions:

For the cinnamon cards, briefly beat the soft butter with a pinch of salt and add the powdered sugar. Beat everything until a whitish creamy mass is formed. Stir in the egg yolk with the almond flavoring.

Put the flour, starch, cinnamon and baking powder in a bowl and mix. Then sift into the butter mixture and mix. Stir or knead quickly otherwise the mixture may become too hard.

Wrap the dough in plastic wrap and chill for at least 30 minutes. Roll out the dough about 4 mm evenly and cut out rectangles. Brush with egg white.

Place half an almond on each corner and half a candied cherry in the center. Carefully place the cookies on a prepared baking sheet.

The cookies rise easily, so leave some space. Bake at 170°C bottom/upper heat for about 12 minutes (depending on the oven). Let cool and serve the cinnamon cookies.
