Instructions:

For the citrojo, wash and roughly dice the limes. Wash the lemon balm, shake dry and pluck the leaves from the stems.

Pour the limes, sugar and lemon balm into whiskey glasses and mash with a pestle. Add the bar syrup, some Angostura and plenty of crushed ice. Top up with the Bionade and serve the Citrojo.
