Blanch the tomatoes, remove the skin and the stalks. Cut into cubes and blend with red wine, stock, minced garlic, basil cut into strips and Tabasco in a hand blender. Transfer to a saucepan, bring to a boil, stirring twice throughout. Remove from heat, cool for 10 minutes. Then pour the mixture through a straining cloth, collecting the clear tomato broth. Bring to a boil again, season with salt, pepper and Tabasco, refine with a strong shot of vodka.
