Coconut Long Grain Rice Soup with Melanzane

Instructions:

Put coconut milk and vegetable soup in a saucepan, stir and boil. Sprinkle in the rice and gently simmer for about 15 minutes. Rinse and clean the melanzani and okra, cut into slices, perhaps halve the melanzani lengthwise beforehand. Peel and finely dice onion and garlic. Rinse chili, clean, remove seeds, finely dice. Remove the shell from the crab tails, remove the intestines, rinse, dry, season. Heat 5 tbsp oil in a frying pan. Sauté garlic, chili, onion, melanzani, okra heartily in it. Add to the soup. Simmer gently for about 5 minutes. Season with salt and pepper. Roast the crayfish tails in 1 tbsp. hot oil in the frying pan.

Divide soup evenly among preheated deep plates. Arrange 1 shrimp on each and bring to table garnished with cilantro leaves.
