Grate, mix with the whole egg, mustard, minced meat mixture, paprika, salt, curry and pepper, form into balls and bake in deep fat until done.

Blanch the peeled asparagus spears in salted water bath, drain and reheat in butter. Cook long grain rice in salted water, add coconut juice, add diced spring onions, season strongly with salt and freshly ground pepper.

For the sauce, sauté the peeled tomatoes (twist on tomato roses from the peel for garnish), the remaining chopped scallions and the olive slices in olive oil, season, cook and finish with chopped basil. Arrange everything decoratively on a flat plate and garnish with basil leaves.
