Instructions:

Briefly toast the grated coconut in a coated frying pan without oil. Rinse the long grain rice several times until the water runs clear. Drain.

Place the long grain rice in a saucepan with the coconut milk, water and saffron threads and bring to the boil, stirring. Add the raisins and make over low heat for 10 min or until most of the liquid is absorbed. Cover, and simmer over very low heat for another 10 min. Remove from heat and stand covered.

Heat oil in a large frying pan, add the sesame seeds as well as the nuts until lightly browned. Add the warm long grain rice and mix gently. Sprinkle with the toasted coke nut.
