For the cold cucumber soup, peel the cucumber, remove the seeds and cut into pieces. Puree together with parsley, yogurt and buttermilk in a stand mixer. Season to taste with salt, pepper and lemon juice. Add smoked salmon cut into strips and serve the cold cucumber soup sprinkled with dill.
