For the fruit ice cream, boil the rice with milk and sugar until soft, squeeze out the soaked gelatine and dissolve in the lukewarm rice, mix well and leave to cool.

Whip the whipped cream and mix into the cold rice. Rinse small molds with water, cover the bottom with the fruit and fill with the cooled rice, refrigerate for about 2 hours.

Before serving, turn out onto plates and garnish with whipped cream and fruit.
