Salsa di gorgonzola fredda Mash gorgonzola with a fork and stir with oil until smooth. Stir in whipped cream, mix well and season with salt, pepper and nutmeg. Finally, add the freshly chopped parsley. Tastes great with a nice mixed leaf salad.
And another tip for the calorie-conscious: You can of course omit the whipped cream, but then you may need a little more oil to make the sauce nice and smooth. It is a delight in any case.
