For the cabbage salad with bacon, cut the cabbage head into quarters, wash and shave into fine strips. Season with salt and let steep with closed lid.

Cut the bacon into cubes. Peel and finely chop the onion and garlic clove. Fry the bacon until the fat is rendered. Add onion and garlic and fry until translucent.

Add vinegar and water and bring to a boil. Add soup and stir through until drippings are dissolved. Stir in caraway seeds, mustard and oil with a whisk. Mix cabbage with marinade and let marinade at room temperature for three hours.

Wash and finely chop the parsley and add to the mixture.

Season the cabbage salad with bacon generously with ground pepper and salt.
