For the corn pancakes, mix all the ingredients together except the oil (corn drained, it should be from the can) and let rest for about 15 minutes. Heat oil in a skillet.

Using a large spoon or small scoop, form small patties of mixture in skillet (flatten slightly) and fry until desired brown on both sides.

Drain on paper towels and serve with chive cream.
