For the cornbread, place all the dry ingredients (except for polenta or coarse cornmeal) in the bowl of a food processor. Add the lukewarm water and the sunflower oil.

Leave the dough to knead well for about 10-15 minutes on speed 2 of the food processor until it is a smooth dough.

Grease a bowl with a little oil, put the dough in it, cover with a tea towel and leave to rise in a warm place for about 1 hour. The volume must have doubled.

Line a loaf pan with baking paper. Remove the dough from the bowl and knead it well so that the air escapes. Sprinkle some polenta or coarse cornmeal on the work surface.

Shape the dough into an oblong loaf and turn it in polenta or coarse cornmeal. Place the loaf in the loaf pan, cover with a tea towel and let rise again for about 1 hour.

In the meantime, preheat the oven to 200 degrees. Place the loaf pan in the center of the oven and bake at 200 degrees for about 30-35 minutes until golden brown.

Afterwards, let it cool completely on a cooling rack before cutting it.
