For the cream of cauliflower soup, wash the cauliflower and cut into small pieces. Chop the onion and sauté with the cauliflower in the butter.

Extinguish with the white wine and as soon as it has evaporated pour in the soup and simmer for about 20 minutes.

Puree, season to taste with any spices and finally thicken with a little cream. Sprinkle the cream of cauliflower soup in the plate with cress and fresh herbs.
