Cream of Pear Celery Soup

Instructions:

For the pear and celery cream soup, peel the celery and cut into small cubes.

Peel the pears, quarter them, remove the core and dice the fruit into small cubes as well.

Peel and finely chop the shallot.

Heat the butter in a saucepan and caramelize the sugar in it until it is melted and slightly brown.

Sauté the onion pieces in it and then add the celeriac and pear pieces. Deglaze with white wine.

Pour in vegetable soup, season with nutmeg, salt and pepper and simmer on low heat for about a quarter of an hour.

Pour in whipped cream and puree the soup with a hand blender.

Season the pear and celery cream soup again with salt and pepper, possibly with balsamic vinegar and serve.
