Instructions:

For the cream slices, prick the puff pastry often and then bake according to package directions. In the meantime, prepare the sponge cake.

Separate the eggs, beat the egg whites with the sugar until stiff, stir in the yolks and finally fold in the flour and cocoa.

Spread on a baking tray covered with baking paper and bake at 180 °C for about 10 minutes. For the first cream, whisk Quimiq until smooth and whip cream. Stir everything together with powdered sugar.

Whip the cream for the second cream. Wash and chop the strawberries. Then layer the cream slices. First 1 puff pastry slice, then the vanilla cream, on top comes the sponge cake, on top the top cream.

Spread the strawberries on top of the cream and then cover the whole thing with the second puff pastry sheet. Then spread the puff pastry with jam.

For the glaze, mix the powdered sugar, water and lemon juice well and then spread on the jam. Let the glaze dry a bit and then cut the cream slices into pieces with a sharp knife.
