Instructions:

Quickly knead rice flour, potato starch and hot water into a smooth rice dough. For the filling, finely chop the scampi and bamboo shoots. Season with salt, sugar as well as some sesame oil and mix with the lard to a sticky mass. Form the dough into a roll and divide into 20 equal pieces. Form the dough pieces into balls and roll each out on a floured surface into a round patty about 8 inches in diameter. Place a tablespoon of scampi marce in the center of each dough ball, fold the dough up, pinch the top and twist well. Place three to six emperor patties at a time on the insert of a bamboo basket (or steaming insert) and steam in a large, well-covered pot over higher heat for about 8 minutes.
