Cucumber Boat with Stremel Salmon

Instructions:

Rinse and clean cucumbers, cut in half lengthwise and scoop out the seeds with a tablespoon. Cut cucumber halves diagonally into 3 pieces each. Finely dice remaining cucumber.

2. peel onion and cut into very fine cubes.

Stir horseradish, yogurt, curd cheese and whipped cream until smooth. Season with salt and pepper. Fold the diced cucumber into the dip.

Cut the salmon into fine slices with a sharp kitchen knife.

Spoon the horseradish cream into the cucumber boats, evenly distribute the salmon pieces on top and arrange on a platter. Garnish with lettuce leaves, lemon slices and dill flags if desired.
