Try this delicious cake recipe:

Knead egg yolks, flour, butter, sugar and water together with mixer. Cover and let rest for 20 min. Roll out dough (0 23 cm) and line a greased tart springform pan (0 20 cm) with it. Press the dough up around the edge. Prick bottom a few times with a fork. Rinse 1 pear, remove peel, halve, core and cut into small cubes.

Beat egg yolks, sugar and butter until creamy. Slit vanilla bean lengthwise. Stir the scraped out curd, vanilla pulp, lemon zest and cornstarch into the egg mixture. Whip egg whites until stiff, fold into curd mixture with pear cubes. Spread on the short pastry base, bake.

Circuit: 170 to 190 °C , 2nd slide bar v. U.

160 to 180 °C , convection oven approx. 55 min.

Cut 1 pear in half, core, cut into narrow wedges.

Boil juice of one lemon, sugar and 2 to 3 tbsp. water, steam pear slices for 2 min, drain. 5-10 min before the end of the baking time, spread evenly on the cake in a fan shape and bake. When the cake has cooled a little, remove it from the mold and decorate with lemon balm.
