For the curd cheese pancake, mix whipped cream with curd cheese, egg yolks, vanilla sugar and salt.

Add flour, stir until smooth and add milk.

Beat egg whites with granulated sugar until semi-stiff and gently fold in.

Heat the clarified butter in an ovenproof pan and pour in the Schmarren dough. Spread evenly, sprinkle with raisins and bake in a preheated oven at 180 °C convection oven.

Then quarter, turn and bake until done. Tear into pieces with two forks, sprinkle with sugar and let caramelize on the stove by swirling repeatedly.

If desired, sprinkle the curd cheese pancake with powdered sugar before serving.
