Instructions:

Sift the flour into a suitable bowl and make a dent. Whisk together the sugar, salt, egg yolks, milk and 250 ml of lukewarm water.

Pour some of it into the indentation and stir from the center with the flour without forming lumps. Gradually add the remaining egg yolk mixture and the oil and let the dough stand for about 30 minutes.

Then whip the egg whites until stiff and fold them into the dough. Heat some butter fat in a skillet, pour in a thin layer of batter and bake until golden brown on both sides.

Before turning the pancakes, add a little fat to the frying pan. Process the remaining dough in the same way.

Mix curd with egg yolk, crème fraîche, lemon juice, sugar, vanilla sugar and lemon zest to a spreadable cream, spread on the pancakes and roll up.
