Instructions:

First separate the eggs. Beat yolks with sugar and vanilla sugar until foamy.

Mix curd cheese with sour cream and cornstarch until smooth. Mix into the yolk mixture and flavor with a little grated lemon zest.

Stir in the semolina and leave to rest in a cool place for at least 20 minutes.

In the meantime, preheat the oven to 180 °C.

Beat the egg whites with a pinch of salt and the remaining sugar until stiff. Fold into the curd mixture.

Heat butter or clarified butter in a large (preferably coated) heat-resistant pan, pour in the mixture and bake briefly.

Place in hot oven and bake for about 5 minutes more. Turn and bake on the other side, also for 5-10 minutes, until the Schmarren is nicely golden brown.

Lift out the finished Schmarren, tear into smaller pieces with two forks and sprinkle with powdered sugar.

Serve the curd cheese and semolina pancake in the pan.
