Instructions:

1. make tea according to package instructions with boiling hot water.

2. Cut 1 vanilla bean lengthwise, scrape out the pulp.

Place pod and pith in a saucepan with plums, pears, apple rings, sugar, cinnamon stick, apricots, plum juice and the tea. Approx.

45 min lightly and best to infuse one night in the refrigerator.

Cut the remaining vanilla pods (2) lengthwise and scrape out the pulp. Whip cream, vanilla pulp and sugar until stiff. Fold in the curd cheese and lemon zest and leave the cream to cool. 4.

To serve, arrange curd and compote in bowls.
