Finely chop garlic clove, peanuts. Deseed tomatoes and finely dice. Chop parsley. Mix with juice of one lemon, curd, olive oil and peanut butter.
Stir ingredients to a cream, season with horseradish, cumin, chili and salt.
Cut cucumber into thin strips and garnish spread with them.
Serve garnished with parsley, peppers and cucumber.
